I Had A Domestic Morning… The Result Was Yummy!

 

As I’ve been out in the garden and doing things on the croft these many past days (it’s been non-stop sunny here!) I feel like I’ve been neglecting some domestic duties that make a home feel homey!  There have been no roast dinners and only very quick and easy meals (picture pork chops and oven baked chips, or spaghetti bolognaise!) to give the house yummy smells.

So I decided to do some quick baking one morning when I was up early – earlier than the Hubs! I had been looking up recipes that used oil instead of butter (I really didn’t want to go to the supermarket if I didn’t have to) and came across the recipe for American Coffee Cake.  I have loved this cake since first having it in America many years ago, and have discovered that Starbucks in the UK usually has it for sale as well.

There is no coffee in this cake, but it’s the perfect accompaniment to coffee (or tea I guess) so that’s why it’s called coffee cake. There’s this brown sugar streusel on top that’s really, really yummy.  I just love this cake and had always thought it was complicated to make until I came across the recipe a few days ago.

I got the recipe from the Lil Luna website (lilluna.com) and not only is it a cheerful and easy one to make, I also found that there was no need to fiddle with any of the instructions.  Do everything as the recipe says and you will get the perfect result in your first go!

It was first thing in the morning (before 7am) and I was in no mood to set up my mixer, so I went old school and used mixing bowls and a wooden spoon.

I was a bit concerned at how gloopy it was in the baking dish (I used the exact size specified). The mixture didn’t spread out quite into the corners either!
But things spread and rise in the oven and the finished product filled the entire pan, corner to corner.

Here’s the recipe from Lil Luna!

Ingredients

  • 1 cup oil
  • 2 eggs beaten
  • 1 tsp vanilla
  • 1 cup milk
  • 1 cup sugar
  • 3 cups flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cup brown sugar
  • 2 tsp cinnamon
  • 1/2 cup margarine/butter melted

Instructions

  1. In a large mixing bowl. combine oil, eggs, vanilla and milk together.
  2. In a medium bowl, blend together sugar, flour, baking powder and salt.
  3. Combine egg mixture with flour mixture. Pour half the batter into a lightly greased 9×13 pan.
  4. In a medium bowl, prepare streusel by combining brown sugar and cinnamon.
  5. Sprinkle half of streusel on top of the batter. Top with remaining batter and then sprinkle the remaining streusel on top.
  6. Drizzle with melted margarine.
  7. Bake, uncovered at 350 for 25-30 minutes.
The cake was light and fluffy with lovely streusel bits all the way through. It tasted exactly like it should. I’m so glad I have this recipe now!
